How to revive limp celery

If you have celery that has become limp you can:

1. Cut the bottom 1/4 inch off of the stalks and put them in really cold water standing upright. The water should come about 1/3 of the way up on the stalk.
2. You can chop it up and put in baggies and put it in the freezer to use in soups, casseroles, etc. that call for celery.

I was just thinking about this this morning because I've got some extra celery in the fridge. I was wondering if it could be frozen satisfactorily. Thanks for the timely tips!

I knew celery could be frozen. I'd never thought about "crisping it" in water though. Cool tip.

Limp celery also works great at the bottom of the crock pot when making a roast or steak. I put it on the bottom of the crock, lay the meat on top of it, add garlic powder, put the lid on and let it cook on low. Adds great flavor and helps the roast taste way better than if it wasn't used up this way and adds a wonderful flavor to the "gravy" that results (which I also drain and make into pan gravy before serving.

For steak--same thing only I pour a can of diced tomatoes (or use up fresh ones) on top of the steak laid over the limp celery in the bottom. Excellent results.

Other uses: chop up in chicken pot pie, used in making soup stock, or used in chicken noodle soup.
